Grilled Veg Pizzas

Grilled Veg Pizzas on Pita bread featuring our Devondale Shredded Mozzarella

Ingredients

  • 250gm butter nut pumpkin, peeled and finely sliced
  • 200gm yellow squash, finely sliced
  • 2 small zucchini, finely sliced lengthwise
  • 1 tbls olive oil
  • 4 small pita breads
  • 200gm sweet potato dip, or use your favourite
  • 250g Devondale Shredded Mozzarella


To Serve

  • 2 tbls pepitas
  • Seeds from ½ pomegranate
  • 2 tbls Dukkah seasoning
  • Handful of fresh salad leaves

Directions

  1. Preheat oven to 230c. Place sliced vegetables in a bowl and toss to coat with the olive oil. Grill vegetables until just tender.
  2. Place the pita bread on a lined oven tray. Spread each with a bit of the dip and then top with the grilled vegetables and the Devondale Shredded Mozzarella.
  3. Bake for 10 minutes or until pitas are crisp and Devondale Shredded Mozzarella is melted and golden brown.
  4. To serve, top each pizza with a sprinkle of pepitas, pomegranate seeds, Dukkah seasoning and a few salad leaves. Serve immediately.
